– A-LEHSOONI PALAK B- PANEER CHEESE TIKKA

Ingredients:
A-LEHSOONI PALAK
Spinach/ Palak (Cleaned , Blanched then in Ice water and Pureed )
2 bunch/ 500g
Ginger (Grated/ Julliene)
2 inch
Garlic (Chopped)
7-8no.
Amul Ghee
1Tbs.
Oil
1Tbs.
Cumin seeds
1/4th tsp
Cloves
3-4
Bay Leaf
1 no.
Onion (Chopped)
1 Med.
Tomato (Chopped)
1 Med
Turmeric Powder
½ tsp.
Red chilli powder
1 tsp.
Amul Fresh Cream
1 Tbs
Salt
To Taste
Kasoori Methi
½ tsp
Amul Butter
1 Tbs
Whole Red chilli
2 no.
Green chilli (chopped)
1no.
Cumin powder
½ tsp
Coriander powder
½ tsp
Garam Masala powder
A pinch
B- PANEER CHEESE TIKKA
Paneer (thick squares with a slit)
250g
Amul Cream
3 Tbs
Hung Curd
3 Tbs
Cashew Powder
2 Tbs
Ginger Garlic Paste
½ tsp
Geen chilli (Chopped)
1 Small
Coriander Stems (Chopped)
1 Tbs
Kasoori Methi
½ tsp
Bhuna Besan
1tsp
Black pepper powder
¼ tsp
Garam masala Powder
A pinch
Cardamom powder
A pinch
Amul Cheese (Grated)
¼ cup/ 55g
Salt
To Taste
Method:
For PANEER CHEESE TIKKA :
• To make Creamy Marination for paneer : Blend Togather Grated cheese, Amul cream, Cashew Powder, Ginger-garlic Paste, Bhuna Besan, Black pepper powder, Kasoori methi, Cardamom Powder, Garam Masala powder in blender to smooth paste, Add in Hund curd, Chopped Green chili and Coriander stems.
• Slit thick Paneer cubes and stuff it with grated Amul cheese. Apply the Creamy Marination and keep aside in refregiration for about 2 hours.
• Preheat oven to 400F or 200C
• Arrange marinated stuffed Panner pieces on a baking tray and Roast it at 400F 0r 200C Oven for 10-15 minutes to be Golden brown.
For LEHSOONI PALAK :
• Wash, Clean and pluck Spinach, Blanch in Boiling water for 2-3 minutes and chill in Ice water for 5- minutes. Squeeze out the excess water.
• Blend Blanched Spinach Puree in blender to smooth Puree.
• In a separate pan heat oil , add in cumin seedsCloves and Bay leaf and let it crackle .
• Add in whole red chillies
• In goes Chopped garlic and sauté it to golden brown on slow Flame while stirring continuously.
• Add in Chopped onion and sauté till Translucent.
• Add in ghee.
• Add in chopped ginger and green chilli
• Add in red chilli powder, Cumin powder, coriander powder, Turmeric powder followed by Chopped Tomatoes
• Cook tomatoes till oil oozes out and add in Spinach puree.
• Cook for 5 minutes and fimish it with Kasoori methi , Garam Masala, Cream , Amul butter
To Assemble:
Serve hot Lehsooni Palak topped with cheesy paneer tikka on top , garnish with some chilli oil . ginger julliene and cilantro. Relish it with steaming hot Basmati rice or Choice of your Bread (Roti)
